The British pork sausage is a coarse-textured sausage in a natural skin, seasoned simply so the meat leads. Cumberland is peppery and usually sold as a long coil, Lincolnshire is sage-heavy, and a plain pork sausage is the all-rounder for breakfasts, bangers and mash, and toad in the hole.

In our Toad in the Hole they are browned in hot beef dripping before the batter goes over them, which keeps the skins crisp.
