Cod loin is the thick, prime centre cut of the cod fillet, taken from the back of the fish. Its firm, bright white flesh cooks into large, moist flakes with a mild flavour, and its even thickness helps it cook evenly.
Cod is the classic choice in British fish and chip shops, especially in the south of England. In our Easy home Fish & Chips recipe, a 200g piece is patted dry, seasoned, dusted with flour, dipped in beer batter and deep-fried until golden.
