Vegetable oil is a general name for cooking oils made from plants, such as rapeseed, sunflower, soybean or palm oil. It has a neutral taste and copes well with high heat, which makes it a good all-round oil for frying.
Most British chip shops fry in vegetable oil, although some, particularly in the north of England, still use beef dripping. In our Easy home Fish & Chips recipe, the oil is heated to 180°C in a deep pan or fryer to cook the battered fish. Fill a pan no more than a third full, check the temperature with a thermometer if you have one, and never leave hot oil unattended.
