Baking Powder: Our favourite ingredients to cook at home
Baking powder is a raising agent made from bicarbonate of soda mixed with a dry acid, such as cream of tartar, and a little starch to keep it dry. When it is mixed with liquid and heated, it releases tiny bubbles of carbon dioxide that make batters and doughs light and airy.
British bakers use it in scones, sponges and quick breads. In our Easy home Fish & Chips recipe it is whisked into the flour for the batter, so the coating puffs up and turns light and crisp in the hot oil. For the best rise, mix the batter shortly before frying and use baking powder that is within its date.
