Back Bacon: Our favourite ingredients to cook at home
Back bacon is cut from the loin, so each rasher is mostly lean meat with a strip of fat along one edge. It is the rasher the British breakfast is built on, and it grills as well as it fries. Middle cut carries a little more fat and a tail of streaky, which crisps beautifully.
We use it grilled in our Back Bacon with Poached Egg and Greens, fried with onion in our Corned Beef Hash, and on the plate in our Full English Breakfast. Prime Food cures Lean Back Bacon and English Middle Cut Bacon in our own facility in Pattaya, in 250g and 500g packs, cut to an even thickness so the rashers cook at the same rate.
