Beef Suet: Our favourite ingredients to cook at home
Shredded suet is hard beef fat, grated and coated in flour. Because it stays solid until the dumpling or pastry is already cooking, it melts late and leaves pockets of air, which is what makes suet dumplings light instead of heavy.
