Courgette: Our favourite ingredients to cook at home

Courgette, or zucchini. It holds a lot of water, so give it a hot oven and plenty of room on the tray, or it steams instead of roasting.

It goes into our Chicken Sausage & Roasted Vegetable Tray Bake, cut into thick half-moons so it keeps some bite.
