Plain Flour: Our favourite ingredients to cook at home
Plain flour is finely milled wheat flour with no raising agent added, known in the US as all-purpose flour. It is a staple of the British kitchen, used for pastry, sauces, pancakes, Yorkshire puddings and batters.
In our Easy home Fish & Chips recipe, 150g of plain flour is whisked with baking powder and a pinch of salt, then mixed with cold beer into a smooth batter about as thick as double cream. A light dusting of flour on each fillet before dipping helps the batter stick.
