Haddock Tails: Our favourite ingredients to cook at home

Haddock is a North Atlantic white fish from the same family as cod, with a slightly sweeter flavour and finer, softer flakes. Tails are the thinner, tapering end of the fillet, so they cook a little more quickly than thick centre cuts.

Haddock is the traditional choice in many chip shops in Scotland and the north of England, and smoked haddock goes into British classics such as kedgeree and fish pie.
