Diced Stewing Beef: Our favourite ingredients to cook at home

Stewing beef is cut from the harder-working muscles, so it needs long, slow cooking. Give it two hours and the connective tissue turns to gelatine, which is what thickens the gravy and makes the beef give way under a fork.

In our Steak & Ale Stew with Suet Dumplings it is browned in beef dripping, then simmered with onion, carrot and a bottle of ale. Prime Food sells Thai Top Side Diced Stewing 500g, trimmed and diced in our own facility in Pattaya.
