Grilled Lamb Loin Chops with Mint Sauce
Get the griddle properly hot before the chops go near it. Stand them on their fat edge for the last minute and that fat crisps instead of staying soft. Rest them for five minutes afterwards, the same as you would a steak.
Ingredients
- 3 - Lamb Loin Chops
- 1 tbsp - Mint Sauce , To serve
- 1 - Salad Leaves , a handful
- 1 - Salt and Pepper , To taste
Cooking Method
- Take the chops out of the fridge 20 minutes before cooking and season both sides with salt and pepper.
- Heat a griddle pan until it is very hot.
- Cook the chops for 4 to 5 minutes each side, pressing them flat against the pan so they colour evenly.
- Hold them with tongs and stand them on their fat edge for a minute, until the fat is golden and crisp.
- Rest for 5 minutes on a warm plate.
- Serve with the salad leaves and mint sauce. No heavy sides needed.
